It's The Most Wonderful Time of the Year...

I'll apologize now for the lack of posts past, present, and for the immediate future because with the holidays I probably will continue to slack. lol I intend to spend as much time as possible spoiling my husband, visiting with family, and enjoying our Christmas season together!
I've been quite the busy baker. I've made cookies twice already. Erik's favorite: Peanut Butter and Chocolate Chip (aka PB&CC's.) I make them large (think dessert plates that come with dish sets) and he devours them. After that, we decided to make some Christmas Sugar Cookies and decorate them, so we spent a day baking and another decorating. It was a blast. Probably one of the most fun things we've ever done together.
Then Erik had a Christmas party this last Tuesday evening so I spent all day Monday baking, assembling and decorating two of my four-layer filled cakes. One was Devil's Food with Chocolate Cheesecake and Chocolate Truffle fillings and mousse and whipped frosting. The second was a French Vanilla cake with Vanilla Bean Cheesecake and Strawberry fillings and a cheesecake mousse and whipped cream frosting. They were huge hits. No one believed they were homemade and Erik's commander asked for my number. Hahaha!
At present, my stuffed peppers are in the oven baking. I think if someone would pay me to cook meals all day the way I want I'd do it in a heart beat, but I'd want to make my own menu and call the shots. I've considered the options such as being a personal or private chef or someday opening some small restaurant or the miracle of finding one that isn't doing so hot and wants someone to come in and revamp and cook. It'd be amazing. My practical side, however, knows I'm just going to continue to look into my Phlebotomy studies. People will always need blood drawn, whereas in a recession, people may not always go out to eat.

I hear the squeaks of a toy coming from the other room. I think the pup wants to play. I'm off for now!
